Off To Morocco!

Now that school has started we are settling back into a good routine.  That routine includes our Family International Night and this week we headed to Morocco!  It also happened to be the night we were celebrating my birthday so we were joined by my sister and bro-in-law and their son, Conner, and my cousin Carla (her husband Brandon had other plans and couldn’t make it).  We had a great time learning about Morocco, thanks to the Showalter family for sharing some interesting cultural tid-bits with us!  We prayed for that family as they minister to the people of Morocco.

Here’s the delicious recipe I used, I think it was my favorite meal so far!

Beef Tagine and Cauliflower

3 pounds beef, cubed

1/4 tsp. turmeric

salt and pepper to taste

3 Tbsp. Olive oil

Saute beef in turmeric, salt and pepper in oil for 15 minutes.  Add 2 tsp. paprika, 1/4 tsp. ginger, 1 tsp. cumin, pinch cayenne, 1 medium onion (chopped), 1/4 cup cilantro (chopped).  Cover and simmer for 1 hour, add water as necessary.  Add 1 head of cauliflower, cut into bite size pieces. Simmer for 20 minutes then add the juice of 1 lemon.  Serve over rice.  YUM!
